Return/Make-up Air Fans

In a commercial kitchen, it is important to make sure that the amount of return air balances out with the output capacity of the exhaust fan. Make-up air is required to replace air that was removed. This helps the exhaust system function properly. The return-air fan must run simultaneously with the exhaust fan. This is imperative because if only one of the fans is running while the other is not, dangerous hazards may occur within the ductwork, which may result in kitchen fires.

The air that comes back into the building via make-up air fan should be within a certain temperature range for comfort and safety. In colder climates, air cannot be cooler than 50 degrees Fahrenheit and in warmer climates care must be cooled to room temperature around 68 degrees Fahrenheit. A commercial kitchen vent hood is an interconnected system and serves to make a restaurant and its kitchen a safe and comfortable place for employees and patrons.
